Making Jamie Oliver Healthy Breakfast Doughnuts!

You would probably be hard pressed to guess from the ingredients below that these were the ingredients required to make doughnuts.  These weren't your deep fried average doughnuts, they were Heathy Breakfast Doughnuts from a Jamie Oliver recipe which he showcased on his recent TV series.  Here are the ingredients which the recipe requires:

Here is how the doughnuts looked after mixing the ingredients rolling out the dough. I used the end of a roll of cling film to create the circle in the middle of the doughnut.

Next it was time to get cooking the doughnuts, here they are fizzing away in the water that they were cooked in.  No oil in sight!  They really plump up in the cooking stage of this recipe.



The end result was a delicious ring doughnut topped with greek yogurt with a mixed berry coulis stirred through it.




I managed to snaffle down 2 of the doughnuts for my breakfast, they were very filling.  To get the full flavour of the doughnut I ate 1 without the greek yogurt and simply dipped 1 side in cinnamon sugar which let me tell you now was awesome!  

The doughnuts were perfect washed down with a lovely hot cuppa.


So if you are a doughnut lover I urge you to give this 'healthy-fied' Jamie Oliver recipe a try! I think they will become a staple in my household.

What I Ate Wednesday No.88 - Disney World Special 2

Welcome back to the second What I Ate Wednesday Disney World Special.  You can find the previous one here.

Breakfast 
Pancakes - American Pancakes with strawberry compote at our resort (All Star Movies).  The pancakes were fluffy and light and the compote had lots of chunks of strawberry in.  I had this breakfast more than once during my 2 weeks stay. 
Drink = Tea in my refillable Disney World mug.





Lunch
Panini/hot sandwich - A veggie hot sandwich from the Earl of Sandwich at Disney Springs.  It had feta, cucumber, red onion, lettuce, Roma tomato and a creamy Mediterranean dressing.  It really hit the spot.
Drink = water.





Dinner
A gigantic baked potato with grated cheese and sour cream from Fairfax Fare in Hollywood Studios.  It came with baked beans too but luckily before tucking in I noticed they had pulled pork in them!  This was not stated on the menu.  I went back up to the counter and they swapped them for coleslaw with no issue.  After consuming my fair share of chips it was great to tuck into a baked potato for a change. 
Drink = water, topped up my mug at a water fountain.

What I Ate Wednesday No.87 - Disney World Special 1

Welcome to a What I Ate Wednesday Disney World Sepcial!

I was in Disney World for a couple weeks in October and I thought I would share some of the delicious food that I ate whilst I was there.  

This particular day was spent at Disney Springs (previously known as Downtown Disney).  If you have not been before, Disney Springs has a lot of shops, bars and restaurants.  It really comes alive with atmosphere at night with live bands playing on the stage or at the various bars.

Brunch
A huge vegetable omelette with breakfast potatoes and a piece of artisan toast topped with butter and grape jelly (jam) at Earl of Sandwich.  This was delicious and kept me full for ages so I did not have any room for more food until dinner time.  Drink = water in my Disney refillable mug, saves buying water for $3 a bottle!



Dinner
French Poutine from The Daily Poutine.  This consisted of delicious chunky chips (although they called them french fries) topped with mushroom cream sauce and gruyere cheese.  It was super tasty and I highly recommend it - I could eat it again right now!  Drink = water in my Disney refillable mug.

Autumn 2016 Clothing Haul



Hello everyone

I have been taking a look at a few clothing websites with Autumn in mind recently.  My usual haunts are ASOS, New Look and Dorothy Perkins.  I made a couple orders for some autumn inspired basics and will share with you all what I decided to keep in this post.

Striped Long Sleeve Top - Okay so I have far too many striped tops in my wardrobe to be fair but I felt this black and white one would be a perfect addition to my collection.




Striped T-shirt - I then proceed to add this bergundy knot front to my basket...I don't have one in this colour okay!  I like the knot detail on this.



Pink Jumper - I bought this from New Look with the below mentioned furry gilet in mind.  It is slim fit and quite a fine knit.




Furry Gilet - I got this cosy grey longline gilet.  I thought it would go well with the black and white striped top or the pale pink jumper above. 



Ripped Jeans - These dark wash denim boyfriend jeans have a rip on each knee.  They came from New Look and fitted me so well not sure how much use they will get in the colder months though as I like to be warm.  They can be worn turned up or turned down though.






Velvet Bomber Jacket - I almost sent this back as it didn't feel very 'me' but after much deliberation I kept it.  I foresee wearing it as Christmas time with a scrappy top underneath as it is quite dressy with the gold zip detail.  I guess it could also be worn casually with a white slouchy top and boyfriends jeans.



Grey Jumper - I just love this grey jumper, it looks just like your basic oversized jumper…until you spot the elbow detail which is navy coloured stars.  I just thought it looked nice and was a bit different.



Nike Roshe Trainers - When it comes to footwear I am ALL about comfort. I umm'd and ahh'd for months about what trainers to get.  I even ordered the Nike Juvenate before returning them as they weren't comfy enough!  I then ordered these Roshe ones instead.  I took them to Florida with me this month and they served me well. I also have a couple pairs of Chelsea boots (in tan and brown )which I will be wearing again this season.

My Top 10 Tips for a Long Haul Flight


Hi all

I have experienced a few long haul flights now so I thought I would put together a list of my top 10 tips for getting through a long haul flight.  I hope you find it useful.

1.       Dress comfortably – You will be sitting on a plane for hours on end so ensure you dress comfortably in loose fitting clothing.  You don’t need to rock up in your pj’s or on the other end of the scale your no stretch skinny jeans and high heels.  What you are aiming for is something that is has stretch to it and makes you feel comfy.  Think leggings or harem trousers.  Then maybe pair them with a long shirt or t-shirt with a cardigan or jumper to go over the top.  Layers are best as planes can get chilly.

2.      Entertain Yourself – Personally, I don’t find the in-flight entertainment enough on a long haul flight.  I like to take a book or magazine, adult colouring and some music to listen to so that when I want a break from the screen I can do something else.  It is a long time for your eyes to focus on the screen otherwise.

3.      Snooze – Take ear plugs and an eye mask to help you catch some shut eye should you fancy it.  This is especially essential on a night flight where getting some quality sleep helps ward off jet lag.

4.      Comfy Headphones – Test our your earplugs/earphones to ensure that they are comfy to wear for long periods so you can make it through a film without ear pain!

5.      Pre-book your seat – I find that for long-haul flights pre-booking your seat is worth doing.  Although it is annoying that most airlines now charge for the privilege of you pre-booking your seat I feel it is worth the expense.  I choose to be next to a window and in-line with the aeroplanes wing (less turbulence).  Seatguru.com is good for helping you find the best seat for your needs.


6.      Hydration – We all know how drying flying is to the body and skin and drinking plenty of water whilst 40,000 feet up is the only way to combat it.  Alcohol and high caffeine drinks have a de-hydrating effects so bear in mind you’ll need even more water.

7.      Move Around – Don’t glue yourself to the seat, stand up to stretch your body out and have frequent toilet breaks (what with all the water you’ll be glugging!).  I sat by 1 chap on the way to New York and he did not move from his seat once for the entire 6.5 hours, I could not sit still for that long if I tried!

8.      Flight Socks – I know not everyone wears them but I figure why not, they keep your legs warm from the chilly air con chills and stop your feet and legs swelling up so you feel more refreshed when you get off.  I also like to lift my feet up and circle them in the air at regular intervals to keep the circulation stimulated.

9.      Meditate – A great way to kill some time on the flight is to meditate.  There are apps which you can download such as Headspace or Calm which can guide you through a 10 minute or longer meditation session.  If you are having trouble sleeping it may even help you drift off.

10.   Snacks – If you are fussy or aren’t a fan of aeroplane food then you are gonna need some snacks to keep you going.  You could pack some crisp, dried fruit, cereal bars or pastries.

What I Ate Wednesday No.86

Here are the 3 main meals that I ate on another average day, as usual it does not contain snacks.

Breakfast

Granola Parfait - This contained yogurt, Dorset Cereal granola, blueberries and strawberries all layered up into a yummy parfait.  Drink = tea.


Lunch

Homemade roast dinner - I had 2 yorkshire puddings, sage and onion stuffing balls, roast potatoes, broccoli and a nut cutlet (top of plate, almost buried under broccoli).  I do love a good roast dinner when I have the time to put in to make 1 from scratch.  Drink = water.





Dinner

Banana & PB Toast - Wholemeal toast topped with Meridian smooth peanut butter and a sliced banana.  Drink = tea.

What I Ate Wednesday No.85

Breakfast

Fruit topped granola - Dorset cereals granola with semi skimmed milk, topped with fresh strawberries and desiccated coconut.  The frozen yogurt cups in the middle of the bowl are natural yogurt with blueberries in 1 and banana in the other which I froze in silicone cupcake cases. Drinks = water & English breakfast tea.



Lunch

English Muffin - A wholegrain English muffin (from Asda), with 1 half spread with butter and the other half spread with strawberry jam.  Drink = water.




Dinner

Macaroni Cheese - This was a meal out at a local country pub.  It was a delicious super cheesy macaroni cheese with garlic bread and a side salad.  Drink = water.

6 Things You Need To Do Before Your Disney World Holiday



Welcome to another Disney World tips blog post.

If you haven't already be sure to check out my Disney Theme Park Bag Essentials.  

Now without further a do lets get started...

1. Wear In Your Trainers - So you've bought yourself a brand spanking new pair of trainers that you are saving for your holiday.  With the sheer amount of walking you will be doing around the parks you need to properly wear those bad boys in beforehand.  No one wants sore feet or blisters in Disney World!

2. Book Park Tickets - You need to figure out which ticket(s) suits you best and purchase them BEFORE you go to get the best deal.  Don't make the mistake of trying to rock up at the gate and purchase them once you are over there.

3. Order A Currency Card - Instead of taking a load of cash with you, I recommend ordering a currency card.  I first took one to New York and it was so much simpler to just swipe the card and be on my way.  You can often get a better currency rate too.  I did take some cash with me as well but it was great to have the 2 options.  The other plus is If the card gets low whilst you are away you can just login to the site and top it up.  I got mine from FairFX.

4. Make An Itinerary - spontaneous people often recoil at the thought of an itinerary  whilst on holiday but it is necessary to get the most out of a Disney holiday. Don't forget to schedule in some rest days where you can sit by the pool and recharge if needed.

5. Disney Fast Passes - To facilitate booking your fast passes you first need to have finished that initerary that I mentioned above. You can then schedule fast passes for the attractions up to 60 Days in advance of your trip if you are staying in a Disney work resort hotel (30 days If staying off site).

6. Airport Transfers - When you get off the plane it's great to know you have a transfer booked and waiting to whisk you off to your accommodation.  So whether it's a hire car, the Disney Express (orlando International only) or a private transfer ensure you have it booked beforehand.

Breakfast

Granola - Dorset Cereals simply oat granola with semi skimmed milk and chopped fresh strawberries and a sprinkle of desiccated coconut.  Drinks = water and tea.


Lunch

Bagel - A Cinnamon and raisin bagel, one half topped with Merdiian smooth peanut butter and the other half topped with butter.  Served with some diced strawberries.  Drink = water.



Dinner

Burger - A spicy bean burger in a brioche bun with cheddar cheese, 3 plum tomatoes, sweetcorn with butter and a potato waffle.  Drink = water.

What I Ate Wednesday No.83

I can't believe we are in the later half of September already - where is time going?!  It is funny how much the foods you crave/eat change along with the season.  

I hope you enjoy this weeks What I Ate post.

Breakfast

Oat So Simple porridge made with semi-skimmed milk topped with chopped dates, cinnamon and almond slithers.  Drink = tea.

Snack

I don't normally include snacks but I thought id include these Go Ahead raspberry and white chocolate cookies bites.  They are ok, not a huge amount of flavour but i do LOVE biscuits with my cuppa.


Lunch

Falafel flatbread - homemade sweet potato falafel a (using a recipe from the BBC website), in a wholewheat flatbread drizzled with tahini.  Drink = water.



Dinner

Wholewheat fusilli pasta with a tomato sauce with roasted Mediterranean vegetables, topped with cheese and a sprig of basil.  Drink = Orange and mango squash.

5 Disney World Theme Park Bag Essentials





As I have visited Disney World in the past and I am currently packing to head there again in a few weeks time I thought I would share with you my top 5 Disney World park bag essentials.


So here goes...

1. Flip flops
If like me you choose comfy trainers as your footwear attire whilst walking around the parks then taking flip flops purely for water rides is a great way to avoid soggy feet.  They are light to throw in your back pack but slipping them on before the ride is a simple yet effective way to enjoy the water rides and keep those trainers and socks dry.




2. Water bottle (BPA free)
This will save you a lot of money and is more environmentally friendly then purchasing numerous bottles of water whilst at the park.  The Florida tap water is disliked by many for its strong chlorine taste.  So on my upcoming trip I am giving the 'Box Appetite - eau good!' water bottle a try.  I will let you know how I get on on my return!



3. My Disney Experience app 
Download the My Disney Experience app on your phone (screen shots below) before heading into the parks.  It has a map of each park, details of your dining reservations, ride wait times and shows your fast passes.  It also shows your PhotoPass photos if you have Memory Maker included in your park admission.





4. Portable Phone charger
Due to the above tip your phone may drain pretty quickly, especially if you have a fun packed day and then decide to stay till the evening for the firework show.  So it is worth bringing a lightweight portable phone charger with you such as those below which will give your phone a boost when needed.




5. Waterproof zip-lock bag
It happens to the best of us your drinks bottle decides to fall over and spill everywhere or you sit at the wrong spot of a water ride and your bag ends up soaked through.  This is where a zip lock bag or waterproof phone holder (below) comes in handy, to keep those valuables dry.

What I Ate Wednesday No.82

Happy Wednesday guys!  I hope you are having a great day.

Here is another What I Ate in a day run down for ya.

Breakfast

Crunchy nut cornflakes with semi-skimmed milk.  Drinks = tea and water.


Lunch

Pancakes & fruit - Chocolate protein pancakes (a body coach recipe I saw on Instagram) with strawberries, blueberries and a drizzle of maple syrup.  Drink = water.



Dinner

Sweet potato, veggie burger & veg - Baked sweet potato round with a vegetable burger (Waitrose), peas and broccoli.  Drink = water.
