What I Ate Wednesday No.25

Breakfast

Oat So Simple porridge topped with maple syrup with pecans.  With a jolly good cup of tea.



Lunch

Wholewheat seeded English muffin topped with sautéed mushrooms and scrambled eggs.  With a small glass of orange juice and a glass of water.




Dinner

2 egg omelette filled with cheddar cheese and mushrooms, served with oven baked potato wedges and tenderstem broccoli.  With a Glass of Robinsons orange squash.

What I Ate Wednesday No.24

Breakfast

Graze Bramble Country muesli with milk and cup of tea in my Disneyland mug.

Museli & a cuppa

Lunch

Packed lunch eaten throughout the working day comprising of a Tesco brown thin filled with Meridian peanut butter, a Activia Fusion blueberry and Acai yogurt, Naked orange crunch bar, banana and red and green grapes.  2 bottles of water.

This was meal number 1 of my Hello Fresh veggie box, you can read my Hello fresh review here. This was the Gnocchi Allo Genovese with Toasted Pine Nuts & Broccoli recipe - sounds a bit posh for a midweek meal.  It was really tasty and simple to make.
Drink = Glass of water.

Hello Fresh: Meal #3 - Sweet Potato Wraps with Minted Tzatziki &Toasted Almonds

Hi everyone

Here is the round up of my final meal (number 3) from my Hello Fresh box.  Wraps are not something I would normally make for my dinner, it is usually something I would have for lunch instead so I wondered how filling it would be.  I even considered adding some rice as a side dish to make it into a proper meal.


The ingredients for this recipe were:  sweet potato, almonds, garlic, cumin, sumac, lemon, red onion, greek yogurt, mint leaves, cucumber, baby gem lettuce, carrot and wholemeal tortillas.
 

Meal 3 Ingredients

I discovered a new spice with this recipe as I had not heard of sumac before, which adds a lovely lemony flavour to the dish.  I liked the fact that the tortillas were wholemeal as when food shopping I always opt for the wholemeal options.

This took me about 50mins to make as there was a lot of vegetable preparation involved.

I had forgotten how nice sweet potato is, it has rekindled my love for this vegetable.  The portion size of this meal was huge.  It made 3 large wraps per person, so I need not have worried about it filling me up. Needless to say there were leftovers but I wrapped mine up and popped it in my lunch box for work the next and got to relive the yumminess all over again!

Hello Fresh: Meal #2 - Roasted Butternut Squash & Halloumi Jumble

Hello again

Next up for meal number 2 from my Hello Fresh box we have Roasted Butternut Squash and Halloumi Jumble.  Just the picture of the meal made me want to consume the recipe card!

Recipe Card

The ingredients for this meal were: butternut squash, red pepper, rocket, halloumi, pine nuts, red wine vinegar and bulgur wheat.  I have not tried bulgur wheat before so was intrigued to give it a try.  I have also not cooked with halloumi before.

Meal 2 Ingredients
This one took longer to make, I would say it was approx 50mins.  As expected cutting up the butternut squash was a bit of a challenge despite the tips on the front of the recipe card of how to make it easier; even YouTube videos were of little help!  Like I have mentioned before my knife skills are non existent. 

Here is the finished meal.  It was really tasty and the butternut squash just melted in your mouth.  The halloumi, as it always is, was very salty which, looking on the bright side, increased my water intake - hehe.

So this meal was another resounding success, maybe it will all go wrong with meal number 3 which is skill level 2.  Could it be a step too far for my culinary skill set?

Hello Fresh: Meal #1 - Gnocchi Allo Genovese with Toasted Pine Nuts & Broccoli

Hello everyone!

You may have seen my recent Hello Fresh Box Grand Opening post, if not I would advise having a read of that post first to understand the background behind this one.

Anyway, the first meal which I decided to make from the Hello Fresh 'veggie box' was the Gnocchi Allo Genovese with Toasted Pine Nuts & Broccoli.  On the front of the recipe card is a little background behind the dish, I now know where the word 'pesto' comes from!


The ingredients for this meal were: 1 pack of gnocchi, bunch of basil, pine nuts, hard Italian cheese, tenderstem broccoli and garlic.  The hard Italian cheese was vegetarian (which you would expect in a vegetarian dish) but if you are a fellow vegetarian you may also find that it is not easy to find in supermarkets.  So far I have only found it in Sainsbury's as part of their basic range, so if anyone knows of anywhere else please let me know!


Meal 1 Ingredients

Gnocchi with Allo Genovese with Toasted Pine Nuts & Broccoli

This was super easy to make and took just 30 minutes.  The recipe called for a pestle and mortar which I don't own so I improvised and used a blender which did the job nicely.  I had never made my own pesto before but I thought this tasted so much nicer than the shop bought jars.  

My partner does not like broccoli so he had pancetta with his instead and I used up the spare broccoli with another meal.

The individual portion sizes were very generous.  If you are not that hungry or have a small appetite you may find there are some leftovers available for the following day (which is no bad thing!). 

This meal gets top marks from me!  I thoroughly enjoyed it.

What I Ate Wednesday No.23

This was a rather tasty, treat-filled Saturday.  I tried to be super healthy on the Sunday to make up for it.

Breakfast
Oat So Simple Banana and Strawberry Heaps of Fruit porridge.  I had not tried these before and when they were on offer I picked up a box to try.  They are handy for times when you don't have any fresh fruit left, but obviously nowhere near as healthy.  
I had the usual cup of tea with it to wake me up.



Lunch

Wholemeal bagel topped with 1 Laughing Cow Light cheese triangle and creamy scrambled eggs.  Glass of water too.




Dinner

A margarita pizza with a Domino's dip, Tesco cheese and tomato dough balls (only half of the doughballs shown were eaten by me, just thought id point that out - hehe). 

With a glass of water and an Innocent Super Smoothie (kiwi, lime & wheatgrass).

Dessert: Gu After Dark Gu-zillionaires' pud - Deliciousness in a pot!  With a cup of tea.


Hello Fresh Box Grand Opening

Hi everyone

I thought I would share with you my recent experience of Hello Fresh.  In case you are not familiar with the company here is some background info.  It was started not very long ago by Patrick and some fellow HelloFreshers in his living room.  The aim is to change the way the nation eats as they believe everyone should have access to fresh ingredients and the knowledge to cook them.

I recently received the Center Parcs magazine and in amongst the leaflets that fell out was a £25 voucher for Hello Fresh so I thought I would give it a try as it meant it would only cost £11.  The full cost per week is £36.

There are currently 3 types of boxes available, a Classic box, a veggie box or a family box which feeds 4.

Being a vegetarian I ordered a 'Veggie Box' which contained the ingredients for 3 meals and 2 portions per meal.  You can look on the website to see what the current and upcoming recipes are so that you know you are ordering something that you will enjoy eating.

Whilst ordering I specified where I would like the box to be left on delivery day as I knew I would be at work.  The box was left in the safe place as I requested.  The boxes are specially chilled and when I arrived home the contents were still perfectly cool.

I was so excited to open the box up and check out the ingredients and recipe cards inside.  The ingredients were good quality and seemed very fresh.  The spices and nuts were all measured out for you taking some of the effort out of preparation.

I would not call myself a particularly experienced cook so I was pleased to see 2 of the recipes were skill level 1 and the other was a level 2.  My knife skills are pretty much non existent and I know butternut squash can be little blighters to cut up so I was a little nervous.

Master Bedroom Transformed!

Here it is guys, the long awaited finished master bedroom post!  

In case you missed it here is the awful state the bedroom was in BEFORE.

I am very pleased with the way it has turned out and feel it fits the 'luxury hotel chic' look I had in mind.

If you would like to know where I bought things from check out my Master Bedroom Haul.  Additionally, the furniture is from Ikea in white-stained oak colour.  The bed, mattress and headboard is from Bensons for Beds and super comfy.  The Lumie wake up light and bedside table lamps are from Amazon.  Carpet is from Carpet Right and has a lovely thick pile.

What I Ate Wednesday No.22

Breakfast
A cup of tea in a mug of my favourite colour.  Then a warm bowl of Oat So Simple porridge with 1 mashed banana in it and few dark choc chips on top.  The choc chips were leftover from the healthy Energy Balls I made, the recipe can be found here.



Lunch
Chicago Town mini 4 cheese pizza with a side salad of gem lettuce, grated carrot and cucumber. Glass of water.

Dinner
Quorma (Quorn Korma) - Quorn chicken pieces in a korma sauce served with Tilda brown quinoa rice and a garlic and coriander naan bread.  Glass of water.
