Healthy Protein Energy Balls

Hi everyone

I thought I would share with you a recipe for yummy healthy protein energy balls.  They are great to eat pre or post workout or as a mid afternoon pick me up.  They are so easy to do and no baking required! Win win! 

The recipe makes approx 12 balls depending on the size you roll them.

Special equipment: Food Processor 

Ingredients: (makes approx 12)
1/2 cup of Oats
40ml Honey
1/4 cup Peanut butter (crunchy or smooth)
1/4 TSP Vanilla extract
1/8 TSP Cinnamon
1/8 cup Sunflower seeds
1/2 cup Pecans
1/2 cup Almonds 
1/8 cup Plain choc chips


Step 1: Blend up the oats, pecans, almonds and sunflower seeds.
Step 2: In a seperate bowl add the peanut butter, honey, Cinamon & vanilla.
Step 3: Combine the 2 sets of ingredients together.
Step 4: Add the Choc chips
Step 5: Place the bowl in the fridge for 30mins.
Step 6: Divide the mixture up evenly and squeeze into balls.  Pop in a airtight container and store in the fridge.

Here is the finished result:

I will definitely be making them again as I found myself reaching to have 1 of these with a cuppa instead of a biscuit which is obviously healthier for me.

What I Ate Wednesday No.21

Breakfast

Oat So Simple porridge with maple syrup.
With a small Innocent smooth orange juice with a Spatone liquid iron supplement in and a cup of tea.



Lunch


The contents of my lunchbox today were a Coleslaw (lower fat version) sandwich on brown poppy seed bread, Activia raspberry and lychee yogurt, a banana, Nakd cocoa crunch bar (1st time I've tried these and will be getting them again).  

Along with 2 bottles of water and an Upbeat strawberry protein drink.




Dinner

Sausage casserole made with Couldron vegetarian sausages, sweetcorn, passata, chilli, red, yellow and green peppers.

Glass of water and an Innocent smooth orange juice.

What I Ate Wednesday No.20

Breakfast

Oat So Simple porridge oats with syrup and fresh raspberries with a cup of tea.



Lunch 

Throughout my working day...Special K caramel biscuit moments, peanut butter sandwich on brown poppy seed bread, Activia 0% peach yogurt, banana and a clementine. 2 bottles of water.


Dinner

Oven baked jacket potato, topped with cheddar cheese and half a tin of Branston beans, with broccoli and tomato quiche.  Glass of water and small glass of Tropicana smooth orange juice.

Florida Holiday 2015

I am very happy to share with you al that I have 2015's holiday booked...we are going to sunny Florida for 2 weeks.  When I saw 'we' I mean me (obviously), my partner, my Mum, Dad, Sister, Brother and my Brothers Girlfriend.  So excited!

We are staying in a self catering villa with private pool on a complex in Kissimmee.

We are planning to visit the following parks Universal Studios, Universal Islands of Adventure, Sea World, Busch Gardens, Wet & Wild water park and Aquatica waterpark.  Possibly Discovery Cove too.  So no Disney parks planned this time around.

We have also planned in some serious shopping in the various outlets and malls such as Florida Mall.  

I am already planning to fill up on the likes of peanut butter M&Ms, Flipz and Reeses cups.  I don't find the vegetarian food options plentiful, veggie burger and chips often becomes my only option in the parks whilst I am there!

We still need to get the park tickets and hire car booked up so planning to get that sorted over the weekend.

Prep wise I am in serious need of some summery clothes so you can probably expect a holiday shopping haul or two in the future.

Look Back at 2014's Plans

I thought I would do a look back at the plans I made back in January 2014.  The link to the post where I set out my plans for 2014 can be found here 1st Jan 2014: Heres to 2014.

Here is how it actually turned out in comparison..


Holiday wise we had a long weekend at Easter in Weymouth in a caravan with family.



My partner and I celebrated our 10 year Anniversary with 5 days at Center Parcs, Longleat Forest.  We had such an awesome time, you can read all about what we got up to here.

Then in October we booked a pretty last minute trip to New York, a place I had always dreamed of going which you can hear all about here

On the baking front I didn't really do any more baking than normal, I saved myself the disappoint of it all going wrong by...not bothering!  One thing I did make that actually turned out amazing (even if i do say so myself) was Peanut Butter Bites - Be warned they are more-ish!

The 2 bedroom transformations are complete, you can read about the first one here.  

I will do a post on the finished result in the Master Bedroom soon, it was completed in December so that was a close call but it was completed in time.

The garden however is well on its way but not yet complete.  I hope to complete it during the early part of 2015, depending on the weather and when family can help with laying the patio.

So all in all it was an awesome year and I achieved most of my original plans.

I spent my New Years Eve relaxing in the Bath, followed by using my new Micro Pedi on my feet whilst watching Corrie!  My drink of choice was tea and snack of choice was Thorntons chocolates.  Then I got into bed at midnight pulled back the curtains and watched the fireworks out the window - It doesn't get much more rock 'n' roll than that!

Graze Peaches Provencal granola with a cup of tea.


Lunch 
Homemade pancakes topped with raspberries and syrup - so yummy!




Dinner
Spicy enchiladas filled with Quorn mince, topped with cheese serviced with Tilda brown Quinoa rice.  Pint of Robinsons orange squash.

Christmas Presents 2014

Well that's another Christmas Day gone in a flash!  The quickest one yet I fear.  My day was spent with my partner, my parents, brother, sister and grandparents.

It is safe to say I was throughly spoilt. I thought I would share some pictures of the main presents I received this year as I love nosing at other peoples.  The purpose of this post is not to brag or show off.  Hope you find it interesting!
